Buy fresh.

We are lucky in India to have convenient options to buy vegetables and fruits - vendors selling at street corners, in the bazaar/sandai/market, at the kadai/grocery and at the super markets. We can buy often rather than store canned or frozen or processed. Many of our mothers and grandmothers knew when the best times to shop for the freshest vegetables were and how to check if they are fresh. These days, with things coming from afar sometimes it is difficult to tell. Ask your local vendor when his supplies come in.

Because traditional varieties of papaya are so difficult to transport they must be harvested and delivered in a short time frame. We watched our farmer climb the areca nut tree to take down a papaya for us
